Pasta with Turkey Meatballs and Bocconcini

Ingredients

8 ounce small pasta (ie farfalle, mini rigatoni, small shells)
¾ pound ground turkey
¼ cup bread crumbs
1 tablespoon Wildtree Garlic Galore Seasoning Blend
1 egg, beaten
¼ cup grated Parmesan, divided
½ cup fresh chopped parsley, divided
1 teaspoon Wildtree Rancher Steak Rub
1 tablespoon Wildtree Natural Grapeseed Oil
½ cup Wildtree Chicken Bouillon Soup Base, prepared according to package directions
1 pint cherry tomatoes, halved
8 ounces bocconcini (small mozzarella balls)

Method of Preparation

Set a large pot of water to boil. In a large bowl, combine turkey, breadcrumbs, Garlic Galore, egg, 2 tablespoons Parmesan, 1/4 cup parsley, and Rancher Steak Rub; mix to combine. Using a 1 tablespoon measure for each, form mixture into meatballs (you should have about 20). In a large nonstick skillet, heat the Grapeseed Oil over medium-high heat. Add meatballs, and cook, turning occasionally, until browned all over, 5 to 7 minutes. Add the prepared Chicken Bouillon; simmer, stirring occasionally, until meatballs are cooked through and liquid is reduced to about 1/2 cup, 10 to 15 minutes. Add tomatoes; cook until they begin to soften, about 1 minute. Meanwhile, cook pasta in boiling water until al dente, according to package instructions. Drain, return to pot, and place on the still-warm burner. Add bocconcini, meatballs and sauce, remaining 1/4 cup parsley, remaining 2 tablespoons Parmesan. Season with salt and pepper, and toss until combined.
