Method of Preparation
Heat a medium nonstick skillet over medium heat. Add the Grapeseed Oil. Sauté the spinach and sundried tomatoes until the spinach is just wilted. Transfer to a mixing bowl along with the cooked pasta and balsamic vinegar. Toss to combine. Divide among two bowl and top with feta cheese.

Pasta with Turkey Meatballs and Bocconcini

Ingredients
8 ounce small pasta (ie farfalle, mini rigatoni, small shells)
¾ pound ground turkey
¼ cup bread crumbs
1 tablespoon Wildtree Garlic Galore Seasoning Blend
1 egg, beaten
¼ cup grated Parmesan, divided
½ cup fresh chopped parsley, divided
1 teaspoon Wildtree Rancher Steak Rub
1 tablespoon Wildtree Natural Grapeseed Oil
½ cup Wildtree Chicken Bouillon Soup Base, prepared according to package directions
1 pint cherry tomatoes, halved
8 ounces bocconcini (small mozzarella balls)
Method of Preparation
Set a large pot of water to boil. In a large bowl, combine turkey, breadcrumbs, Garlic Galore, egg, 2 tablespoons Parmesan, 1/4 cup parsley, and Rancher Steak Rub; mix to combine. Using a 1 tablespoon measure for each, form mixture into meatballs (you should have about 20). In a large nonstick skillet, heat the Grapeseed Oil over medium-high heat. Add meatballs, and cook, turning occasionally, until browned all over, 5 to 7 minutes. Add the prepared Chicken Bouillon; simmer, stirring occasionally, until meatballs are cooked through and liquid is reduced to about 1/2 cup, 10 to 15 minutes. Add tomatoes; cook until they begin to soften, about 1 minute. Meanwhile, cook pasta in boiling water until al dente, according to package instructions. Drain, return to pot, and place on the still-warm burner. Add bocconcini, meatballs and sauce, remaining 1/4 cup parsley, remaining 2 tablespoons Parmesan. Season with salt and pepper, and toss until combined.

Tuscany Pesto Burger
Ingredients
½ cup Wildtree Basil Pesto
3 tablespoons warm water
2 tablespoons Wildtree Natural Grapeseed Oil
1 pound ground beef
1 ½ tablespoon Tuscany Bread Dipper Herb Blend
4 slices provolone cheese
4 buns, toasted
1 whole roasted red pepper, sliced
Method of Preparation
In a bowl hydrate the Basil Pesto with the warm water. Add the Grapeseed Oil, stir to combine, and set aside. In a separate bowl use your hands to combine the beef and Tuscany Bread Dipper. Shape into 4 patties. Heat grill or grill pan to medium and cook until burgers reach desired doneness. Top each burger with a slice of provolone cheese. Spread the prepared Basil Pesto on each bottom bun. Top with the cooked burger, then some of the roasted red pepper strips, and the top bun.

This Kid F'wen'dly Wednesday recipe is made
with out New Hearty Oatmeal Mix-In: Sugar & Spice! This is such a
tasty little treat that is easy to make. Try it out!
Cinnamon Sugar Tortilla Chips with Strawberry Salsa:
Ingredients
4 (8 inch) whole wheat tortilla
2 teaspoons Wildtree Natural Grapeseed Oil
2 teaspoons Wildtree Hearty Oatmeal Mix-In: Sugar & Spice
1 cup strawberries, finely diced
2 avocado, diced
2 teaspoons cilantro, chopped
2 teaspoons lime juice
salt and pepper to taste
Method of Preparation
Preheat the oven to 350° degrees. Brush the tops of the tortillas with Grapeseed Oil. Sprinkle the Sugar & Spice evenly over the top of each tortilla. Cut the tortillas into about 8 wedges. Arrange on a lined baking sheet. Bake for about 10 minutes until crisp. Add all remaining ingredients in a bowl. Stir lightly to combine. Serve immediately.

2 plantains, peeled and thinly sliced
1 tablespoon Wildtree Natural Grapeseed Oil
2 tablespoons Wildtree Hearty Oatmeal Mix-In: Sugar & Spice
Method of Preparation
Preheat oven to 375 degrees F. Toss the plantain slices with the Grapeseed Oil and Sugar & Spice until all surfaces are coated. Spread the plantains in a single layer on a greased baking sheet. Bake for 25-35 minutes or until plantains start to brown and turn up slightly around the edges. Allow the chips to cool slightly before transferring them to a dish. They will crisp up during cooling.
